Mexicali Stew!

Thanks to Kathy Dunn for sending this recipe to me. I have been wanting this one for a long time. I love this one and it's soooo easy. Try it for yourself.

MEXICALI STEW

2 lbs. ground beef, browned
2 cans whole kernel corn (drain 1)
2 cans red kidney beans (rinse and drain both)
2 cans diced tomatoes
1 can Rotel with green chilies
1 large box Mexican Velveeta – cubed

Put all ingredients in Crock-pot at least 2 hours ahead of serving time. Stir occasionally.
Serve over Whole Grain Corn Chips.
